Our buyers walk the village routes before dawn through every season. Nothing is committed to the ledger until it has been handled and weighed.
When rain, mist or a closed track threatens a route, the affected shops are contacted before the load sets out. The delivery is then held, split or rerouted rather than left to soften in a parked cart. The change and its reason are both written into the ledger so that the next route is planned better.
